Preparing the Catfish

Prepare the Breading Station
In a shallow dish, combine the all-purpose flour, cornmeal, cajun seasoning, salt, and black pepper. In another bowl, whisk together the eggs and milk.

Bread the Catfish
Dip each catfish fillet first into the flour mixture, then into the egg mixture, and finally back into the flour mixture to ensure a good coating.

Heat the Oil
In a large heavy pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Fillets
Carefully place the breaded catfish fillets into the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Sandwich

Prepare the Vegetables
Wash and dry the lettuce leaves. Slice the tomato and onion into thin rounds.

Assemble the Sandwich
On each hoagie roll, spread a generous amount of tartar sauce. Layer with lettuce, a fried catfish fillet, sliced tomato, and onion.
