Preparing the Cake

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, salt, and granulated sugar until well combined.

    Mix Wet Ingredients

    In another bowl, combine the vegetable oil, eggs, and vanilla extract. Beat until well mixed. Then stir in the grated carrots and crushed pineapple.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix.

    Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
