    Prepare the Steak

    Pat the beef steaks dry with paper towels to remove excess moisture. This will help achieve a nice sear.

    Season the Steaks

    Rub the blackened seasoning evenly over both sides of each steak. For a spicier kick, you can add more seasoning to taste.

Cooking

    Preheat the Pan

    Heat a cast-iron skillet or heavy-bottom pan over medium-high heat for about 5 minutes. If using olive oil, add it just before placing the steak in the pan.

    Cook the Steaks

    Once the pan is hot, place the seasoned steaks in the skillet. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Avoid moving the steaks around to allow a good crust to form.

    Add the Bleu Cheese

    In the last minute of cooking, sprinkle the bleu cheese crumbles on top of the steaks. Cover the pan with a lid to help the cheese melt slightly.

Serving

    Plate the Dish

    Remove the steaks from the skillet and let them rest for about 5 minutes. This allows the juices to redistribute. Serve with a sprinkle of chopped fresh parsley for garnish if desired.
