Prepare krab
If using imitation crab sticks, separate into 12 equal sticks. If using real lump crab, form into 12 compact pieces about 1 1/2"–2" each so they hold shape. Pat each piece dry with paper towels to remove excess moisture.

Lightly season each piece with 1 tsp salt and 1/2 tsp black pepper distributed among pieces. Drizzle or brush lemon juice over and set aside on a plate while you prepare coatings.

Set up dredge and panko
Place 1/2 cup flour in a shallow bowl and season with 1/2 tsp salt and 1/4 tsp black pepper. Place 1.5 cups panko (or fine breadcrumbs) in a second shallow bowl. In a third bowl combine 1 cup flour, 1/4 cup cornstarch, and 1 tsp baking powder for the batter.

Make the batter
To the flour/cornstarch/baking powder bowl, add 1 large egg and 3 tablespoons cold sparkling water. Whisk lightly to combine, then add ice cold water gradually (up to 1/4 cup) until batter reaches a thin, slightly runny pancake-batter consistency that will coat but not pool heavily. Keep batter cold—place bowl over another bowl with ice if available.

Coat the krab pieces
Working one piece at a time: dredge a krab piece in the seasoned 1/2 cup flour, shaking off excess. Dip into the cold batter to coat completely, letting excess drip off for 3–5 seconds. Press into panko breadcrumbs to fully cover; gently press crumbs into the surface. Place each coated piece on a wire rack while you finish coating the rest.

Heat oil
Pour 4 cups neutral oil into a medium Dutch oven or deep frying pot. Heat over medium-high to reach 350°F (175°C). If you don't have a thermometer, test by dropping a pinch of batter — it should sizzle and float steadily without browning immediately.

Fry in batches
Fry the coated krab pieces in small batches (3–4 pieces at a time) so oil temperature remains steady. Fry 2.5–3.5 minutes per batch, turning once if needed, until the coating is golden brown and crisp. Do not overcrowd the pot. Use a slotted spoon or spider to remove pieces and transfer to a paper towel–lined tray or wire rack to drain.

Whisk together 1/4 cup mayonnaise, 2 tablespoons sweet chili sauce, 1 teaspoon soy sauce, and 1 teaspoon lime juice until smooth. Transfer to a small bowl for serving alongside the fried krab pieces.
