Prepare crab
Drain and pat the imitation crab meat (surimi) dry with paper towels. Flake or chop it into 1/2-inch pieces so the mixture holds together well. If using fresh crab meat, gently pick and fold it in; avoid over-handling to keep lumps intact.

Make mixture
In a medium mixing bowl, whisk the 2 eggs until blended. Add mayonnaise, Dijon mustard, lemon juice, chopped green onion, chopped parsley, Old Bay seasoning, 1/2 tsp salt and 1/4 tsp pepper. Mix until combined. Fold in the flaked crab meat (and fresh crab if using) so pieces are evenly coated but not mushy.

Form portions
Using a spoon or 1/4-cup measure, scoop the crab mixture and form into 4 even patties (about 3–3.5 ounces each) or 4 rounded mounds. Press gently so they hold together but remain slightly loose. If mixture feels very wet, refrigerate 10–15 minutes so it firms up slightly.

Prepare dredging stations
Place flour and cornstarch together in a shallow bowl; add 1/4 tsp salt and 1/8 tsp pepper and whisk to combine. Place the remaining 1/2 cup plain breadcrumbs (if using) or an extra 1/4 cup panko in a second shallow dish. Put panko breadcrumbs in a third shallow dish. If you prefer a single coat, use flour then panko. For a thicker crust, use flour → egg wash → plain breadcrumbs → panko double-dredge (see next).

Dredge the patties
Lightly dust each crab patty in the flour mixture, shaking off excess. If using the egg wash step, beat an additional egg in a small bowl and dip the floured patty into the egg, then press into the plain breadcrumbs, then finish by pressing into panko. If skipping the egg, simply pat panko onto the floured patty so it adheres. Place breaded patties on a tray and refrigerate 10 minutes to help coating set.

Fry the krab patties
Carefully place 2 patties in the hot oil without crowding the pan. Fry 3–4 minutes per side, or until golden brown and crisp and an instant-read thermometer in the center reads at least 145°F if using fresh crab. Adjust heat as needed to prevent burning; lower to medium if crust browns too quickly. Transfer cooked patties to a wire rack set over a baking sheet or paper towels to drain excess oil. Repeat with remaining patties, adding a little more oil if necessary.

If making a quick spicy mayo: mix 1/2 cup mayonnaise or tartar sauce with 1 tsp hot sauce (adjust to taste). Chill until ready to serve.
