Method
White Balsamic Glaze

Combine 1 cup white balsamic vinegar and 2 tbsp granulated sugar in a small saucepan over medium heat.

Bring to a gentle simmer, then reduce heat to low and simmer uncovered, stirring occasionally, until liquid has reduced to about 1/4 cup and coats the back of a spoon, 18–25 minutes. Watch carefully to avoid burning.

Remove from heat and let cool; glaze will thicken further as it cools. Transfer to a small jar and set aside at room temperature.
Croutons

Preheat oven to 375°F (190°C). Cut 3 slices of day-old bread into 1/2-inch cubes.

Spread cubes in a single layer on a baking sheet. Bake 10–12 minutes, tossing once halfway through, until golden and crisp.

Remove from oven, while still warm rub all sides lightly with 1 garlic clove (cut in half) to infuse flavor. Set aside to cool.
Whipped Ricotta

Place 1 cup whole-milk ricotta and 2 tbsp softened cream cheese into a food processor or high-speed blender.

Add 1 tsp lemon zest, 1 tsp lemon juice, a pinch (about 1/4 tsp) salt and pinch (about 1/4 tsp) black pepper.

Blend until smooth and airy, about 30–45 seconds. Scrape down sides and blend another 10–15 seconds if needed. Transfer to a bowl and refrigerate until ready to assemble.
Heirloom Tomato Salad

Slice or roughly chop 1 lb assorted heirloom tomatoes into wedges or thick slices, keeping varied colors for visual contrast. Place on serving platter or individual plates.

Tear or scatter 6 oz fresh stracciatella over and between the tomato pieces, allowing the creamy curds to mingle with tomatoes.

Drop 6–8 small quenelles or spoonfuls of the chilled whipped ricotta across the platter, spacing evenly.

Scatter cooled croutons over the salad for crunch.

Drizzle 2 tbsp extra-virgin olive oil evenly over everything, then spoon the white balsamic glaze over the tomatoes and cheese—use about 2–3 tbsp or to taste.

Season with 1 tsp sea salt and 1 tsp freshly ground black pepper evenly across the dish.

Finish with a few torn basil leaves (8 leaves) or a handful of microgreens, a sprinkle of flaky sea salt, and a light drizzle (1 tsp) of extra-virgin olive oil.
