Dough

Activate yeast
In a small bowl combine warm water (about 105–115°F / 40–46°C), sugar and active dry yeast. Stir gently and let sit 5–7 minutes until foamy.

Mix dough
In a large bowl whisk together flour and salt. Make a well, add activated yeast mixture and 2 tablespoons olive oil. Stir with a wooden spoon or dough hook until a rough dough forms.

Knead
Turn dough onto a lightly floured surface and knead 6–8 minutes until smooth and elastic. If using a stand mixer, knead with dough hook on medium for 5–6 minutes.

First rise
Lightly oil a bowl, place the dough inside and turn to coat. Cover with plastic wrap or a damp kitchen towel and let rise in a warm draft-free spot until doubled, about 60–75 minutes.

Shape crust
Punch down the dough and transfer to a surface dusted with cornmeal or flour. Press and stretch or roll into a 12–14 inch round (about 1/4 inch thick). Transfer to a pizza peel or baking sheet dusted with cornmeal.

Combine crushed tomatoes, tomato paste, 1 teaspoon olive oil, minced garlic, dried oregano, dried basil, 1 teaspoon salt and 1/2 teaspoon black pepper in a bowl. Stir until smooth. Taste and adjust seasoning. This no-cook sauce is ready to spread.

Preheat oven
Place a pizza stone or inverted baking sheet in the oven and preheat to 500°F (260°C) for at least 30 minutes. If your oven doesn't reach 500°F, preheat to the highest temperature it allows.

Assemble pizza
Lightly spread about 3/4 cup of the prepared sauce over the stretched dough, leaving a 1/2-inch border for the crust. Sprinkle 1 3/4 cups of shredded mozzarella evenly over the sauce, reserving about 1/4 cup for finishing. Arrange topping 1 (e.g., pepperoni) evenly on one half of the pizza and topping 2 (e.g., sliced bell pepper) on the other half so each topping is distinct.

Add finishing cheese
Sprinkle the reserved 1/4 cup mozzarella and the 1/4 cup grated Parmesan over the whole pizza for even browning and flavor.

Bake
Slide the pizza onto the preheated stone or baking sheet. Bake 8–12 minutes until the crust is golden and cheese is bubbling and lightly browned. Baking time depends on oven temperature and stone heat.

Finish & serve
Remove pizza from oven and let rest 2–3 minutes. Top with fresh basil leaves if using. Slice into 8 slices so each slice has some of both toppings if desired, or keep halves separate. Serve hot.
