    Make simple syrup

    Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar fully dissolves. Do not boil vigorously. Once dissolved, remove from heat.

    Infuse citrus

    While the syrup is still warm, add the lemon zest and lime zest. Stir to combine, cover the pan, and let steep for 15 minutes to extract oils and aroma from the zest.

    Strain and add fresh juice

    Strain the syrup through a fine-mesh sieve into a heatproof container to remove zest. Stir in the 2 tablespoons fresh lemon juice and 2 tablespoons fresh lime juice. If using, add 1 tsp neutral citrus oil or lemon-lime extract and a 1/4 tsp pinch of salt to round flavors. Cool the syrup to room temperature, then refrigerate until cold (about 30–60 minutes). If you prefer a slightly lighter syrup, stir in up to 1 cup cold water to dilute before chilling.

    Assemble the drink

    Fill a large pitcher or individual glasses with ice (about 2 cups ice for a pitcher). Pour 1/2 cup (120 ml) of the chilled citrus syrup into the pitcher or 2 tablespoons per 8 oz glass. Add 4 cups chilled sparkling water to the pitcher (or fill each glass with sparkling water to taste).

    Mix and taste

    Gently stir once to combine syrup and sparkling water, taking care not to flatten the carbonation. Taste and adjust: add more syrup for sweeter, more citrusy flavor or more sparkling water to lighten. If desired, add a tiny extra splash (a few drops) of lemon or lime juice for brightness.

    Serve

    Pour into serving glasses if assembled in a pitcher. Garnish with thin lemon or lime wheels if desired. Serve immediately while cold and fizzy.
