Aranciata (Orange) - Sparkling Italian Orange Soda

Method

Aranciata (Orange) - Sparkling Italian Orange Soda

  1. 1

    Make orange simple syrup

Combine 0.25 cups water and 0.25 cups granulated sugar in a small saucepan. Add the orange peel strip. Bring to a gentle simmer over medium-low heat, stirring until the sugar fully dissolves (about 2–3 minutes). Remove from heat and let steep with the peel for 10 minutes to infuse orange aroma, then strain out the peel.

  2. 2

    Prepare the orange base

While the syrup steeps, juice fresh oranges until you have 1 cup of orange juice. Stir the strained warm simple syrup into the fresh orange juice until well combined. Add 1 tablespoon fresh lemon juice to brighten the flavor. Chill this orange syrup mixture briefly (5–10 minutes) if still warm.

  3. 3

    Assemble the soda

Fill a tall pitcher or 4 serving glasses with about 1 cup ice (divided). Pour the orange juice + syrup mixture evenly into the pitcher or glasses (about 1/4 cup per serving if making 4). Slowly add 3 cups of very cold sparkling water to the pitcher to preserve fizz, stirring gently once to combine. Taste and adjust sweetness by adding a little more simple syrup or lemon juice to balance, if needed.

  4. 4

    Serve

Pour into glasses over fresh ice if prepared in a pitcher. Garnish each glass with an orange slice if desired. Serve immediately while fizzy.

Limonata (Lemon) - Sparkling Italian Lemon Soda

  1. 5

    Make lemon simple syrup

Combine 0.5 cups water and 0.5 cups granulated sugar in a small saucepan. Add the lemon peel strip. Heat gently over medium-low, stirring until sugar dissolves (about 2–3 minutes). Remove from heat and let the peel steep for 10 minutes. Strain out the peel and allow the syrup to cool slightly.

  2. 6

    Prepare the lemon base

Juice lemons to yield about 0.75 cups fresh lemon juice. In a bowl or pitcher, combine the lemon juice with the strained simple syrup and stir to incorporate. Taste — the target is a bright, tart-sweet balance; add up to 1–2 tablespoons more syrup if too tart or a splash more lemon if too sweet.

  3. 7

    Assemble the soda

Place ice (about 1 cup divided) in a pitcher or into individual serving glasses. Pour the lemon + syrup mixture into the pitcher or glasses. Slowly add 3 cups of very cold sparkling water, stirring gently once to bring the mixture together without losing carbonation.

  4. 8

    Serve

Pour into glasses over fresh ice if prepared in a pitcher. Garnish with a lemon wheel or twist. Serve immediately to enjoy maximum fizz.
