Method
Dough

Mix and knead
In a large bowl, whisk together the flour and salt. Make a well in the center and pour in the milk/yeast/egg mixture. Stir with a wooden spoon or dough hook until a shaggy dough forms. Turn onto a lightly floured surface and knead for 6–8 minutes until smooth and slightly elastic. (If using a stand mixer, knead on medium for 5 minutes.) If dough is sticky, add up to 1–2 tablespoons more flour, a tablespoon at a time.
- 3
First rise
Lightly oil a clean bowl and place the dough inside, turning once to coat. Cover with plastic wrap or a clean kitchen towel and let rise in a warm draft-free place until doubled, about 45–60 minutes.
Filling & shaping
- 4
Prepare Nutella filling
If your Nutella is very thick, warm 1 teaspoon of vegetable oil with the Nutella in short bursts in the microwave (10–15 seconds) and stir until slightly more fluid but not hot. Transfer to a small piping bag or a resealable plastic bag with the corner snipped for easier filling.
- 5
Portion dough
After the dough has doubled, punch it down and turn it onto a lightly floured surface. Divide the dough into 18 equal pieces (about 1 to 1¼ tablespoons each). Roll each piece into a small disk about 2½ inches across.
- 6
Fill and seal
Place about 1 teaspoon of Nutella in the center of each disk. Gather the dough edges up over the filling and pinch firmly to seal, forming a smooth ball. Ensure the seam is well sealed so Nutella doesn't leak during baking. Roll the sealed ball lightly between your palms to smooth the surface.
- 7
Second rise
Place the balls seam-side down on a parchment-lined baking sheet or a lightly greased baking tray, spacing them about 1 inch apart. Cover loosely with greased plastic wrap or a towel and let rise for 20–30 minutes until slightly puffy.
Bake & finish
- 8
Preheat and bake
Preheat the oven to 375°F (190°C). Brush the tops of the dough balls lightly with the remaining melted butter. Bake on the center rack for 12–14 minutes, or until golden brown on top and the bottoms sound hollow when tapped. Avoid overbaking to keep centers soft and ensure Nutella stays molten.
- 9
Warm serving Nutella
While the bites bake, warm the extra 1/2 cup Nutella in a small heatproof bowl for 15–25 seconds in the microwave, stirring until smooth and pourable. Keep warm until serving.
- 10
Dust and serve
Remove baked dough bites from the oven and transfer to a cooling rack. While still warm, dust generously with icing sugar using a fine sieve. If desired, sprinkle a very small pinch of coarse sea salt on a few bites for contrast. Serve immediately with the warm Nutella for dipping.
