Simple Ginger Syrup

Prepare ginger
Peel the ginger root and slice it thinly (about 1 cup packed). Thin slices extract flavor quickly; you may also grate for a spicier syrup. Measure 1 cup for the recipe.

Combine and simmer
In a small saucepan combine 1 cup water, 1 cup granulated sugar, the sliced ginger, and the optional whole cloves. Bring to a gentle boil over medium heat, stirring until the sugar dissolves.

Simmer to infuse
Reduce heat to low and simmer uncovered for 10–15 minutes. Taste after 10 minutes; longer simmering yields a stronger, spicier ginger flavor. For a very fiery syrup simmer up to 20 minutes.

Add lemon juice and cool
Remove the pan from heat, stir in 2 tablespoons fresh lemon juice (this brightens flavor and helps preserve syrup). Allow the mixture to cool to room temperature, about 30–45 minutes, so the ginger continues to infuse.

Strain and store
Strain the cooled syrup through a fine mesh sieve (or cheesecloth) into a clean jar, pressing on solids to extract liquid but leaving most sediment behind. Discard solids. Refrigerate the syrup in a sealed container for up to 2 weeks.

Prepare glass
Fill a highball glass with 1 cup ice cubes.

Add ginger syrup
Pour 2 tablespoons of the chilled (or room temperature) strained ginger syrup over the ice. Adjust amount to taste: 1 tablespoon for mild, 3 tablespoons for very gingery.

Slowly pour 8 ounces chilled club soda or seltzer over the syrup and ice to preserve carbonation. Stir gently once or twice to combine.
