    Prep the chicken

    Pat the chicken breasts dry with paper towels. If breasts are very thick, butterfly or pound to an even 3/4-inch thickness for even cooking.

    Make the marinade

    In a shallow dish or bowl, whisk together 2 tbs olive oil, 1 tbs lemon juice, 1 tsp minced garlic, 1 tsp dried oregano, 3 tsp kosher salt, and 1 tsp freshly ground black pepper until combined.

    Marinate

    Place the chicken in the dish, turning to coat thoroughly. Cover and refrigerate for at least 15 minutes, up to 2 hours. (If short on time, proceed after 15 minutes.)

    Cook the chicken

    Heat a grill pan or outdoor grill to medium-high (about 400°F / moderate-high). Oil the grates or pan lightly. Remove chicken from marinade, letting excess drip off. Grill 4–6 minutes per side, or until internal temperature reaches 165°F (74°C). Timing will vary by thickness. Avoid flipping more than once.

    Transfer cooked chicken to a cutting board and let rest 5 minutes. Drizzle with 1 tsp olive oil and slice the breasts thinly or into bite-sized strips suitable for topping a salad bowl.
