Prepare the Dough

In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and stir in flour until fully combined. Allow to cool slightly before adding eggs, one at a time, mixing until smooth.

Fill with Dulce de Leche

Transfer the dough to a piping bag fitted with a star tip. Pipe strips of dough into hot oil (about 350°F/175°C) and fry until golden brown, about 2-3 minutes per side. Remove from oil and allow to cool slightly. Using a filled piping bag, inject each churro with dulce de leche.

Coat with Cinnamon Sugar

In a shallow dish, mix granulated sugar and cinnamon. Roll the filled churros in the mixture while they are still warm to coat evenly.
