    Wash and cut the carrots, cauliflower, red bell pepper, and green beans into bite-sized pieces. Slice the onion thinly.

    Make the Pickling Brine

    In a medium saucepan, combine the white vinegar, water, sugar, salt, black peppercorns, bay leaves, dried oregano, and cayenne pepper. Bring the mixture to a boil over medium heat, stirring until the sugar and salt are dissolved.

    Combine Vegetables and Brine

    Once the brine is boiling, add the prepared vegetables and minced garlic. Remove from heat and let it cool for about 10 minutes.

    Transfer to Jar

    Using a slotted spoon, transfer the vegetables into clean glass jars. Pour the brine over the vegetables, ensuring they are fully submerged. Seal the jars tightly.

    Pickling Process

    Let the jars cool to room temperature, then refrigerate for at least 24 hours before serving. The flavors will develop over time.
