    Marinate the Pork

    In a blender, combine the guajillo chilies, ancho chilies, garlic, cumin, oregano, pineapple juice, lime juice, and salt. Blend until smooth. Pour the marinade over the pork shoulder in a large bowl, cover, and refrigerate for at least 4 hours or overnight for best results.

    Cook the Pork

    Preheat the oven to 300°F (150°C). Place the marinated pork shoulder in a roasting pan and cover it with foil. Roast in the oven for about 4 hours or until the pork is tender and easily shredded.

    Prepare Pineapple

    While the pork is roasting, grill the pineapple slices on a grill or stovetop grill pan until charred and caramelized, about 2-3 minutes on each side. Remove from heat and chop into small pieces.

    Assemble the Tacos

    Once the pork is cooked, remove it from the oven and let it rest for 15 minutes. Shred the pork using two forks. Warm the corn tortillas on a skillet. To assemble, place a generous amount of shredded pork on each tortilla, top with diced white onion, grilled pineapple, and chopped cilantro.

    Serve the tacos immediately with lime wedges on the side for extra flavor.
