    Prepare the Poblano Rajas

    Roast the poblano peppers over an open flame or in the broiler until the skin is charred. Place them in a plastic bag for 10 minutes, then peel off the skin, remove the seeds, and slice into strips.

    Cook the Chorizo or Cauliflower

    In a skillet, heat olive oil over medium heat. If using chorizo, add it to the skillet and cook until browned and cooked through. If using spicy cauliflower, sauté the cauliflower pieces until tender and lightly browned.

    Combine and Heat

    In a large oven-safe skillet, combine the cooked chorizo or cauliflower, poblano rajas, crema, queso Chihuahua, oregano, and salt. Stir until well mixed.

    Melt the Cheese

    Place the skillet in a preheated oven at 400°F (200°C) for about 10-15 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven and serve hot with soft tortillas or house-made chips.
