In a large skillet, heat the olive oil over medium heat. Add the diced poblano and red bell peppers, sautéing until they are soft and slightly charred, about 5-7 minutes.

Stir in the sweet corn and cook for another 3-4 minutes, allowing it to heat through and slightly caramelize.

Incorporate the Cream and Cheese
Reduce heat to low and stir in the crema, queso fresco, and queso cotija. Cook until the cheeses are melted and the mixture is creamy, about 2-3 minutes.

Season the Mixture
Add the homemade salon seasoning, salt, and black pepper to taste. Mix well to combine all flavors.

Transfer the esquites mixture to a serving dish and serve warm with tortilla chips on the side for dipping.
