    Prepare the Dough

    In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and stir in flour until smooth. Allow to cool for 5 minutes.

    Mix in Eggs

    Add eggs one at a time, mixing well after each addition. Stir in vanilla bean paste until fully combined.

    Heat the Oil

    In a large heavy pot, heat vegetable oil over medium-high heat to 350°F (175°C).

    Pipe the Churros

    Transfer the dough to a piping bag fitted with a star tip. Pipe 4-6 inch long churros directly into the hot oil, cutting with scissors.

    Fry the Churros

    Fry churros until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them and drain on paper towels.

    Coat in Cinnamon Sugar

    Mix together the sugar and ground cinnamon in a bowl. Roll the warm churros in the cinnamon sugar mixture until fully coated.

    Serve warm with chocolate sauce for dipping.
