Prepare the Beans
Rinse the pinto beans under cold water and soak them in water overnight. Drain and rinse again before cooking.

Cook the Beans
In a pot, add the soaked pinto beans and cover with water. Bring to a boil, then reduce heat and simmer for about 1 hour or until beans are tender.

Sauté Onion and Garlic
In a frying pan, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

Combine Ingredients
Once the beans are cooked, drain any excess water and add them to the frying pan with the onion and garlic. Stir in salt, black pepper, cumin, and chili powder. Mix well and cook for an additional 5 minutes.

Add Cheese
Remove the pan from heat and stir in the grated Monterey Jack cheese until melted and well combined.

Garnish and Serve
Serve hot, garnished with fresh cilantro on top.
