Tortilla Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Mix well.

    Add Fat

    Add the lard or vegetable shortening to the flour mixture. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

    Add Water

    Gradually add the warm water, mixing until a dough forms. Knead the dough for about 5 minutes until smooth and elastic.

    Rest the Dough

    Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes.

    Divide and Shape

    After resting, divide the dough into 8 equal pieces. Roll each piece into a ball and flatten slightly.

    Roll Out Tortillas

    On a floured surface, roll out each ball into a 10-inch circle, making sure it’s even in thickness.

    Cook Tortillas

    Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for about 30 seconds on each side or until lightly browned and cooked through.

    Keep Warm

    Transfer cooked tortillas to a plate and cover with a clean towel to keep warm while you cook the remaining tortillas.
