    If using block cheeses, shred or chop the white American cheese and cheddar into small pieces so they melt evenly. Toss the shredded cheese with 1 tablespoon cornstarch in a bowl to coat — this will prevent separation and give a smooth texture.

    Warm dairy

    In a medium heavy-bottomed saucepan over low heat combine 1.5 cups whole milk and 0.5 cups heavy cream. Warm gently until small bubbles form at the edge but do not simmer (about 4–6 minutes), stirring occasionally.

    Once dairy is warm, remove about 2 tablespoons of the liquid into a small bowl and whisk in the coated shredded cheeses to form a slightly thickened slurry. Return the slurry to the pot, stirring constantly over low heat until cheese melts into a smooth sauce (3–5 minutes). Keep heat low to avoid graininess or oil separation.

Flavoring & Aromatics

    Cook aromatics

    While the dairy warms, heat 1 tablespoon unsalted butter in a small skillet over medium heat. Add 1/4 cup finely minced yellow onion and sauté 2–3 minutes until translucent. Add 1/2 minced jalapeño and 1 teaspoon minced garlic and cook 30–45 seconds until fragrant.

    Add the sautéed aromatics to the melting cheese mixture along with 1/4 teaspoon ground cumin and 1/4 teaspoon smoked paprika. Stir to combine and continue to cook gently on low for 1–2 minutes so flavors meld.

Liquids & Seasoning

    Adjust texture and flavor

    Stir in 1/2 cup low-sodium chicken or vegetable stock to loosen the queso to desired consistency. Add drained 4.5 oz can of green chiles (fold in) and 1 tablespoon fresh lime juice. Season with 1 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper, taste and adjust salt or lime as needed.

    If the queso is too thick, add additional stock or milk 1 tablespoon at a time until you reach a creamy, pourable consistency. Keep the pot on the lowest heat and stir frequently to maintain smoothness.

    Transfer the queso to a warmed serving bowl or small slow cooker set on low. Stir in 2 tablespoons chopped cilantro. Top with optional 1/4 cup diced tomato and 1 tablespoon finely diced pickled jalapeño if using. Serve immediately with tortilla chips or warm flour tortillas.
