    Prepare chicken filling

    In a large bowl combine the cooked shredded chicken, shredded cheese, chopped onion, minced garlic, ground cumin, chili powder, salt, black pepper, and 1 tablespoon fresh lime juice. Mix thoroughly so the cheese and seasonings are evenly distributed.

    Warm tortillas

    Warm the tortillas to make them pliable: wrap stacks of 4–6 tortillas in a damp kitchen towel and microwave 30–45 seconds or heat briefly in a dry skillet over medium heat for 10–15 seconds per side. Keep them covered so they stay soft while you work.

    Assemble flautas

    Place a warmed tortilla on a clean surface. Put about 2–3 tablespoons of the chicken mixture along the lower third of the tortilla in a line. Tightly roll the tortilla away from you around the filling and secure with a toothpick through the seam. Repeat with remaining tortillas and filling (should yield about 12 flautas).

    Heat oil

    Pour about 1 cup vegetable oil into a large, heavy skillet (cast iron or stainless) to a depth of about 1/4–1/2 inch. Heat over medium-high until shimmering and a small piece of tortilla sizzles immediately (about 350°F / 175°C if using a thermometer).

    Fry flautas

    Working in batches (do not overcrowd), carefully place 3–4 flautas seam-side down in the hot oil. Fry 2–3 minutes per side, turning with tongs, until golden brown and crisp. Adjust heat as needed so they brown without burning. Transfer to a paper towel–lined baking sheet to drain; remove toothpicks.

    Oven option (lighter)

    If you prefer to bake, preheat oven to 425°F (220°C). Place assembled flautas seam-side down on a rimmed baking sheet lined with parchment, brush or spray lightly with oil, and bake 12–15 minutes, turning once, until crisp and golden.

Creamy Salsa Verde (topping)

    While flautas cook, whisk together salsa verde and sour cream (or crema) in a small bowl until smooth. Stir in chopped cilantro, 1 teaspoon fresh lime juice, and 1/4 teaspoon salt. Taste and adjust seasoning; if too thick, thin with 1–2 teaspoons water or more lime juice.

Assembly & Serving

    Arrange shredded lettuce in the center of a serving platter or on individual plates. Place flautas on top of the lettuce bed to help absorb oil and keep them elevated.

    Drizzle or spoon the creamy salsa verde over the flautas (about 1–2 tablespoons per flauta) or serve on the side for dipping. Garnish with diced tomatoes, sliced avocado or spoonfuls of guacamole, and a sprinkle of crumbled queso fresco or cotija. Serve with lime wedges.
