    Place an old-fashioned (rocks) glass in the freezer for a few minutes or fill it with ice and water to chill while you prepare the cocktail.

    Combine ingredients

    Add gin, Bianco vermouth, and Suze (gentian aperitif) to a mixing glass or cocktail shaker filled with ice. Use roughly 1 cup of ice to ensure proper dilution and chilling.

    Stir

    Stir the mixture with a bar spoon for 20–30 seconds (about 20–30 full turns) until the drink is well-chilled and slightly diluted. Aim for a silky texture and a temperature near 0–4°C (32–39°F).

    Prepare glass

    Discard the ice or water from the chilled old-fashioned glass. Add a large clear ice cube or fresh ice to the glass if desired.

    Strain

    Strain the stirred cocktail into the prepared glass over the ice using a Hawthorne or julep strainer.

    Garnish

    Express the oils of a lemon twist over the cocktail by holding the twist skin-side down over the drink and giving it a quick pinch. Run the twist around the rim, then drop it into the glass as garnish.
