Almond-Graham Crust

    Prep and mix crumbs

    Preheat oven to 350°F (175°C). In a medium bowl combine 1.5 cups graham cracker crumbs, 0.5 cup finely ground blanched almonds, 3 tablespoons granulated sugar, and 1/4 teaspoon fine sea salt. Stir to combine evenly.

    Add butter and press

    Pour 6 tablespoons melted unsalted butter over the dry mixture and stir until moistened and it holds together when pinched. Transfer mixture into a 9-inch (23 cm) removable-bottom or pie pan. Press crumbs firmly and evenly across the bottom and about 1 inch up the sides using the bottom of a measuring cup for an even, compact crust.

    Bake crust

    Bake in preheated oven for 10–12 minutes until fragrant and lightly golden. Remove from oven and cool on a rack while preparing filling. Leave oven on (reduce to 325°F/160°C later if recipe calls for it).

Key Lime Filling

    Warm the oven

    Lower oven temperature to 325°F (160°C) if you baked the crust at 350°F. This temperature sets the filling gently for a smooth texture.

    Combine filling ingredients

    In a large mixing bowl whisk 14 oz sweetened condensed milk with 4 large egg yolks until smooth and slightly glossy. Add 3/4 cup fresh key lime juice, 1 tablespoon key lime zest, 1/2 cup full-fat sour cream, and 1/2 teaspoon vanilla extract. Whisk until fully combined and no streaks remain. Do not overwhisk (avoid adding excessive air).

    Fill crust

    Pour the lime filling into the cooled crust and smooth the top with a spatula. Tap the pan gently on the counter to release any air bubbles.

    Bake to set

    Bake at 325°F (160°C) for 12–15 minutes, just until the filling is set at the edges but still slightly jiggly in the center. The center will firm up as it chills.

    Cool and chill

    Remove pie from oven and cool on a rack for 30 minutes. Then refrigerate, uncovered, for at least 4 hours or preferably overnight to fully set and develop flavor.

Whipped Cream Topping

    Chill equipment

    Place a mixing bowl and beaters in the refrigerator for 10–15 minutes (or freezer for 5–10 minutes) to help whip the cream more easily.

    Whip cream

    Pour 1 cup chilled heavy cream into the cold bowl. Add 2 tablespoons powdered sugar and 1/2 teaspoon vanilla extract. Whip with an electric mixer on medium-high speed until soft peaks form for a light, billowy topping. Taste and adjust sweetness to preference.

    Top the pie

    After the pie has chilled, spread the whipped cream evenly over the pie or pipe using a star tip for decorative peaks. Return to refrigerator until ready to serve.

Lime Caviar (Garnish)

    Extract lime juice pearls

    Use a citrus zester or channel knife to collect very thin strips of lime zest from 3 limes. For the 'lime caviar' (tiny beads of citrus juice), hold a very sharp paring knife and score lengthwise through the lime peel very shallowly to remove long thin strips of zest with as little white pith as possible. Submerge the strips in 1 cup cold water in a small bowl and gently agitate; this helps release tiny juice vesicles. Alternatively, if you have a molecular gastronomy setup and agar/spherification kit: squeeze juice from one lime to roughly 2 tablespoons, mix with a pinch of sugar (optional), then use a syringe to drop lime juice into a chilled calcium bath to form spheres. For a simpler visual effect, finely chop a small amount of lime zest and micro-squeeze a few drops of fresh lime juice onto the whipped cream to simulate 'caviar.'

    Rinse and finish

    If you used the water agitation method, drain the water and collect any released vesicles or tiny droplets. Pat dry gently on paper towel. If you used spherification, rinse spheres in clean water and store in a small container until assembly.

    Garnish pie

    Just before serving, scatter the lime 'caviar' sparingly over the whipped cream, add extra lime zest (about 1/2 teaspoon) and toasted sliced almonds (about 2 tablespoons) for texture and aroma.

Serving

    Slice the chilled pie with a warm knife (run under hot water and dry between cuts) for clean edges. Serve each slice chilled, optionally with extra lime caviar and a light sprinkle of toasted almonds. Keeps refrigerated up to 3 days; crust may soften over time.
