Add 1 oz The Macallan, 1 oz Aperol, 1 oz Amaro (such as Amaro Nonino) and 3 tsp fresh lemon juice to a cocktail shaker.

If you prefer the drink slightly sweeter or if your lemon is very tart, add 1 tsp simple syrup. This is optional; the classic Paper Plane is equal parts spirit/bitter/amaro/lemon with no added sugar, but single malts can feel leaner than bourbon.

Add a generous amount of ice to the shaker (about 1 cup) and cap the shaker.

Shake vigorously for 12–18 seconds — until the outside of the shaker is well chilled and the liquid is properly diluted and aerated.

Empty the ice/cold water from your chilled coupe (if used). Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a fine mesh strainer to remove shards of ice and any pulp from the lemon juice.

Express a lemon twist over the drink by holding the twist over the surface and giving it a quick squeeze to release oils, then rub the peel on the rim and drop it into the cocktail as garnish.
