    Rinse all berries gently in cold water and drain thoroughly in a colander. Pat dry with paper towels to remove surface moisture—especially important for whipped cream and dressing adherence.

    Hull and quarter the strawberries if large so their pieces are similar in size to the other berries. Combine strawberries, blueberries, raspberries, and blackberries in a medium mixing bowl. Gently toss to mix, being careful not to crush delicate berries.

Honey-EVOO Dressing

    In a small bowl or jar, add 3 tablespoons acacia honey and 1 teaspoon fresh lemon juice. Whisk briefly to combine.

    Slowly drizzle in 2 teaspoons extra-virgin olive oil while whisking to create a slightly emulsified dressing. The oil amount is small so it won't overpower the berries but will add a silky mouthfeel.

    Lightly crush 1 teaspoon grains of paradise between two spoons or using the flat of a knife to release aroma; stir into the honey-EVOO. Add a pinch of fine sea salt and a pinch of freshly ground black pepper and whisk again. Taste and adjust: add up to 1/2 teaspoon more lemon or 1/2 tablespoon more honey if you prefer brighter or sweeter.

    Pour the dressing over the berries and gently toss to coat evenly. Let berries sit at room temperature for 5–10 minutes to macerate slightly and allow flavors to meld.

Vanilla Sweet Whipped Cream

    Chill a medium mixing bowl and beaters in the freezer for 10 minutes—cold equipment helps cream whip better.

    Pour 1 cup chilled heavy cream into the cold bowl. Add 2 teaspoons powdered sugar and 1 teaspoon pure vanilla extract.

    Using a hand mixer or stand mixer on medium-high, whip the cream until soft peaks form, about 2–3 minutes. Taste and add a small additional pinch of sugar if you want it sweeter, then whip briefly to incorporate. Do not overwhip—stop at soft to medium peaks so the cream remains billowy.

Garnish & Serve

    Spoon the macerated berries into serving bowls or a shallow serving dish, dividing them evenly. Dollop or pipe the vanilla sweet whipped cream onto each portion (about 2 tablespoons each if serving 4).

    Finish each portion with a light scattering of finely grated lemon zest and a few micro basil or mint leaves for a fresh herbal note. Sprinkle extra toasted sliced almonds over the top if using for added texture.

    For an extra touch of savory contrast, drizzle a scant additional 1/4 teaspoon of the EVOO over each serving and grind a tiny pinch of grains of paradise or black pepper on top.

    Serve immediately. Leftover whipped cream can be refrigerated up to 24 hours (re-whip lightly if it loses volume). Macerated berries are best eaten same day.
