    Prepare crème fraîche sabayon

    In a small bowl combine crème fraîche and sour cream until smooth. Stir in minced shallot, lemon zest, lemon juice, and white pepper. Taste and adjust with flaky sea salt as needed. Chill in refrigerator while preparing blini so flavors meld — about 20–30 minutes.

    Portion caviar

    Keep Osetra caviar chilled in its tin on a bed of crushed ice until just before serving. Using a non-metal spoon (mother-of-pearl or bone recommended) portion small quenelles or teaspoons of caviar into a chilled small serving bowl. If using smoked sturgeon roe for contrast, place that in a separate small bowl.

    Garnish elements

    Combine finely snipped chives with microgreens if using. Keep gold leaf in a dry, cool place and handle with tweezers. If serving smoked salmon, gently fold slices into small rosettes to top some blini.

    Activate yeast and combine wet ingredients

    In a small bowl stir warm milk and warm water with the active dry yeast and let stand 5 minutes until foamy. In a mixing bowl whisk the egg with melted butter.

    Make batter

    Whisk together the all-purpose flour, semolina, and salt. Pour the foamy yeast mixture into the egg-and-butter mixture, then gradually add the dry ingredients and whisk until a smooth, slightly thick batter forms. Cover and let rest in a warm place 45–60 minutes until it has puffed slightly. This creates small, tender yeast blini with a delicate crumb suited to luxurious toppings.

    Cook blini

    Heat a nonstick skillet or cast-iron pan over medium-low heat. Brush with a little melted butter. For each blin, drop about 1 tablespoon of batter into the pan (for ~1.5–2-inch blini). Cook until small bubbles form on the surface and edges set, ~1–1.5 minutes, then flip and cook 30–45 seconds more until just set and lightly golden. Transfer to a warm plate and keep loosely covered. Repeat, adding a touch of butter between batches. Yield: ~24 small blini.

    Optional crisp toasts

    If you prefer a crisper vehicle, thinly slice a baguette, brush with butter and lightly toast in a 375°F (190°C) oven until pale golden. Cool before topping.

Assembly & Service

    Plate blini and condiments

    Arrange warm blini on a chilled or room-temperature serving platter. Place chilled bowls of Osetra caviar and any secondary roe on the platter along with the chilled crème fraîche mixture, snipped chives, minced shallot (extra), lemon wedges, and smoked salmon rosettes if using.

    Dress and serve

    To serve: gently spread a small dollop (about 1/2 teaspoon) of the crème fraîche mixture on each blin or toast. Top with a sliver of smoked salmon if using, then a small spoonful (6–8 g) of Osetra caviar. Finish with a few snips of chive, a microgreen, a very light sprinkle of flaky salt if desired, and a microscopic fleck of edible gold leaf for show. Offer chilled vodka or Champagne alongside. Keep leftover caviar refrigerated and consume within 48 hours of opening for best quality.

    Portioning guidance

    Plan on 6–8 grams of caviar per canapé for generous service; this recipe's 120 g of Osetra will top about 15–20 blini, depending on portion size. Serve immediately so blini are slightly warm and caviar remains chilled.
