    Prepare butter and citrus lift

    Soften the unsalted butter at room temperature until spreadable but not melted (about 15 minutes). In a small bowl, whip the softened butter briefly with a fork to create a light texture. Stir in the lemon zest and lemon juice until evenly distributed.

    Season caviar lightly

    Keep the Osetra caviar chilled until the last minute. Place it in a chilled bowl or on ice. Sprinkle the smoked Maldon sea salt and freshly ground white pepper very lightly over the top — the goal is to enhance, not overwhelm, the caviar's natural briny flavor.

    Finish with aromatics

    Fold the finely snipped chives into the caviar bowl gently with a mother-of-pearl spoon (or the back of a cold metal spoon) to avoid crushing the eggs. If using, drizzle the white truffle oil dropwise over the caviar and fold once very gently.

    Prepare the crème fraîche base

    In a medium bowl, combine the crème fraîche, sour cream and minced shallot. Stir until smooth. Taste and adjust: add up to 1/4 tsp more lemon juice or a pinch more salt if desired. Keep chilled until plating.

    Warm and prepare carriers

    Warm the toast points or blini briefly in a 180°C/350°F oven for 3–5 minutes until just heated and slightly crisp at the edges. If using boiled new potatoes, cut them in half, keep warm, and brush lightly with 1 tsp of the extra virgin olive oil and a pinch of flaky salt.

    Assemble individual bites

    Spread a small dollop (about 1 tsp) of the crème fraîche mixture on each warm toast point, blini or potato half. If you prefer the buttery accent, smear a whisper-thin layer (about 1/4 tsp) of the lemon butter on the carrier before the crème fraîche for a richer profile.

    Plate the caviar

    Using a non-metal spoon, mound approximately 5 g (about 1 tsp) of Osetra caviar atop each prepared dollop of crème fraîche on the toast, blini or potato. Keep the remainder chilled for immediate service.

    Add finishing touches

    Drizzle a whisper (a few drops) of extra virgin olive oil around the serving plate and, if using, a single tiny drop of white truffle oil on half the bites for contrast. Gently place one small dill sprig on each bite. For an ultra-luxury presentation, apply a tiny fragment of edible gold leaf to individual caviar mounds using a dry brush or tweezers — handle delicately.

    Serve immediately

    Serve the assembled bites immediately with the remaining chilled Osetra caviar on ice and small mother-of-pearl spoons for guests to add extra if desired. Keep all caviar out of direct heat and serve within 15 minutes of assembly for optimal texture and flavor.
