Chill and prepare caviar
Keep the Osetra caviar chilled until ready to serve. Remove the tin from the refrigerator 5 minutes before plating so the texture is silky but still cold. Do not expose to warm hands or metal utensils—use the mother-of-pearl spoon to portion.

Prepare crème fraîche mixture
In a small bowl, gently fold together the crème fraîche, minced shallot, half of the snipped chives (reserve remaining chives for garnish), lemon zest, and a light grind of white pepper. Taste and add a very small pinch of sea salt only if needed — good Osetra is delicate and usually needs little added salt. Keep chilled until plating.

Warm blini
Heat a nonstick skillet over medium-low heat. Add unsalted butter and swirl to coat. Warm the blini in a single layer for about 20–30 seconds per side just until heated through and slightly crisped at the edges. Do not brown heavily. Transfer blini to a warm plate and keep covered with a clean towel to retain heat for plating.

Plate caviar
Place a dollop (about 1 teaspoon) of the crème fraîche mixture onto each warmed blini or toast. Using the mother-of-pearl spoon, gently spoon roughly 6–8 grams (approximately 1/6 to 1/4 oz) of Osetra caviar onto the crème fraîche on each blini so the eggs sit atop the cream without smearing. Garnish each with a few snips of reserved chives and a tiny flake of lemon zest.

Arrange 6 plated blini or toasts on a chilled serving board or individual plates. Scatter microgreens or baby watercress between the blini for color and a peppery note. Place the remaining toasted brioche on the side for guests who prefer a larger base.

Set the caviar tin on a bed of crushed ice at the center of the serving platter if presenting communally. Provide the mother-of-pearl spoon for scooping. Offer lemon wedges on the side—guests may squeeze a whisper of lemon if desired. Recommend that guests taste the caviar on its own first, then on blini with crème fraîche. Avoid metal cutlery that can impart an off-flavor.
