Vanilla Bean Cookies & Cream Gelato

Prepare custard base
In a medium saucepan, combine the whole milk, 1 cup of the heavy cream, granulated sugar, vanilla bean seeds (or extract), and salt. Warm over medium heat until steam appears and edges begin to simmer, stirring to dissolve sugar (do not boil).

Temper yolks
In a heatproof bowl, whisk the 5 egg yolks. Slowly ladle about 1/3 cup of the hot milk mixture into the yolks while whisking constantly to temper. Repeat with another 1/3 cup. Then slowly whisk the tempered yolks back into the saucepan with the remaining milk mixture.

Cook custard to nappe
Cook over low-medium heat, stirring constantly with a wooden spoon or heatproof spatula, until the mixture thickens and coats the back of the spoon (nappe), about 6–8 minutes and reaching roughly 170–175°F (77–80°C). Do not boil to avoid scrambling the eggs.

Finish custard
Remove from heat and stir in the remaining 1 cup heavy cream. For extra smoothness, strain the custard through a fine mesh sieve into a clean bowl to remove any coagulated bits and the vanilla pod. Cool to room temperature, stirring occasionally, then cover and chill in the refrigerator for at least 4 hours or overnight until very cold.

Churn gelato
Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve gelato consistency (usually 20–30 minutes). During the last 2–3 minutes of churning, add 1 3/4 cups of the crushed chocolate sandwich cookies so they fold in evenly but still leave visible chunks.

Create cookie crumb layer
Press the 1 cup of fine cookie crumbs into the bottom of the prepared 9-inch springform pan to form an even layer. Use the back of a spoon or measuring cup to compact it. Freeze the crumb-lined pan for 15 minutes to firm the base.

Assemble gelato layer
Spoon half of the churned cookies & cream gelato into the frozen crumb-lined pan, smoothing the top. Add a thin ripple of homemade chocolate sauce (about 1/3 cup) over this layer. Freeze for 20–30 minutes until slightly firm. Add the remaining gelato to fill the pan, smooth the top, sprinkle the remaining crushed cookies over the surface, and press down lightly. Cover tightly with plastic wrap and freeze at least 6 hours or overnight until solid.
Chocolate Sauce (homemade)

Warm the heavy cream in a small saucepan over medium heat until it just begins to simmer; remove from heat. Place chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let sit 1 minute to melt.

Stir gently until smooth and glossy. Add butter, corn syrup (or honey), vanilla, and a pinch of salt. Stir until butter is fully incorporated and sauce is shiny. Let cool to room temperature; sauce will thicken as it cools. Reserve about 1 cup for ribboning inside the gelato and the rest for drizzling and garnish. Keep at room temperature if using within a few hours, or refrigerate and gently rewarm before use.
Whipped Frosting

Whip cream and cream cheese
Chill a mixing bowl and whisk or paddle. Beat the softened cream cheese until smooth. In the chilled bowl, whip the cold heavy cream with powdered sugar, vanilla, and pinch of salt until medium–stiff peaks form and the texture is billowy but spreadable. Fold the whipped cream into the smooth cream cheese until fully combined and streak-free. Taste and adjust sweetness if needed.

Pipe or spread
If serving immediately, keep frosting chilled. If frosting the frozen cake, let frosting cool in refrigerator until firm but still spreadable (chilled frosting helps prevent melting the gelato during assembly).
Assembly & Finishing

Unmold cake
Remove gelato cake from freezer. Run a thin knife around the springform edge, then release the pan ring. If acetate or plastic wrap was used, peel it away carefully. Place the frozen gelato cake onto a chilled cake board or serving plate. Work quickly to minimize melting; keep cake on a metal tray over ice if working slowly.

Apply chocolate sauce layer (optional drip)
If you want a chocolate drip or top ribbon, spoon or pipe about 1/3 cup of the cooled but pourable chocolate sauce onto the top center and gently push toward edges to create a drip. Return to freezer for 5–10 minutes to set the drip slightly.

Frost with whipped frosting
Using an offset spatula or piping bag, apply a thin crumb coat of whipped frosting to the top and sides. Because the cake is frozen, apply quickly and return to freezer 10 minutes. Apply a final thicker layer of frosting, smoothing as desired. For a decorative top, pipe rosettes or borders using a star tip.

Garnish
Sprinkle extra crushed cookies around the rim and over the top, and add chocolate shavings or curls. Optionally drizzle reserved chocolate sauce over the top decorations. Freeze 30 minutes to set the frosting slightly before slicing.

Slice and serve
To slice, let the cake sit at room temperature for 3–5 minutes so the frosting softens a touch for cleaner cuts. Wipe a large sharp knife between cuts, warming the blade under hot water and drying it for smooth slices. Serve immediately. Leftovers should be wrapped tightly and kept in the freezer; remove 5–10 minutes before serving for easiest scooping.
