    Prepare honey syrup (if not ready)

    Combine equal parts honey and very hot water (1/4 cup honey + 1/4 cup hot water recommended). Stir until fully combined and cool to room temperature. Refrigerate any extra for future use.

    Add 2 oz Jameson Irish Whiskey, 0.5 oz fresh lemon juice, 0.5 oz honey syrup, and 2 dashes orange bitters into a cocktail shaker.

    Fill the shaker with ice (enough to three-quarters full) and shake vigorously for 12–15 seconds until the shaker feels cold and the outside is frosty.

    Strain the shaken mixture into a chilled old-fashioned glass over 1 large ice cube or 2–3 regular ice cubes.

Sparkle & Finish

    Top the strained cocktail with 2 oz chilled sparkling water to add brightness and a light effervescence. Gently stir once with a bar spoon to combine — do not over-stir, so carbonation is retained.

    Garnish with a lemon wheel or a lemon twist. Express the oils from the twist over the drink by holding the peel over the glass and giving it a quick squeeze, then drop it in.

    Serve immediately while cold. Optionally provide a short straw.
