    Build and shake

    Add 2 oz Elijah Craig Small Batch, 0.5 oz Amaro Montenegro, 0.75 oz Giffard Pêche, and 0.5 oz fresh lime juice into a cocktail shaker. Fill the shaker with ice (enough to chill and dilute slightly).

    Shake

    Shake vigorously for about 10–12 seconds until the shaker is well chilled and slightly frosted on the outside.

    Prepare glass

    Fill a highball or Collins glass with fresh ice (large cubes or crushed, your preference). If you like, lightly rub a lime wedge around the rim for aroma.

    Strain and top

    Double-strain the shaken mixture into the prepared glass over ice to remove small ice chips and any pulp. Top gently with about 4 oz Fever-Tree Ginger Beer, pouring slowly to preserve carbonation.

    Finish & garnish

    If desired, add 1 dash Angostura bitters on top to add aromatic depth. Gently stir once with a bar spoon to integrate the ginger beer without flattening it. Garnish with a peach slice or wheel and a lime wheel or wedge on the rim.

    Serve

    Serve immediately while the ginger beer is fizzy. Provide a straw or long spoon for gentle stirring as the drink is enjoyed.
