    Prepare ingredients

    Remove the Wagyu beef from the refrigerator and keep chilled until ready. Thinly slice the onion and mushrooms if not already sliced. Slice or separate the white American cheese into individual slices. Slice optional peppers if using. Split hoagie rolls but keep hinged.

    Heat pan

    Place a large heavy skillet or griddle over medium-high heat. Add 1 tablespoon vegetable oil and 1 tablespoon butter. Allow until butter foams and oil shimmers (about 1 minute).

    Cook onions and mushrooms

    Add the sliced onions to the hot skillet and sprinkle with 1/4 teaspoon kosher salt. Sauté, stirring occasionally, 3–4 minutes until they begin to soften and brown. Add the sliced mushrooms and continue cooking 3–4 minutes until mushrooms release moisture and both are nicely caramelized. Transfer vegetables to a bowl and keep warm.

    Cook Wagyu beef

    Increase heat to high. Add the remaining 1 tablespoon butter to the skillet and let melt. Add the thinly sliced Wagyu in an even layer (work in two batches if your pan is small). Use a spatula to press and sear, leaving undisturbed 30–45 seconds, then begin breaking into bite-sized strips while spreading across the pan. Season with remaining 3/4 teaspoon kosher salt, 1/2 teaspoon black pepper, and 1/2 teaspoon garlic powder. Add 1 tablespoon Worcestershire sauce and toss to combine. Cook just until beef is browned but still tender, about 1–2 minutes total for thin slices.

    Combine beef with vegetables

    Return the cooked onions and mushrooms to the pan with the beef and stir to combine for 30 seconds to reheat and marry flavors. Taste and adjust seasoning if needed.

    Melt cheese and finish

    Reduce heat to low. Evenly distribute the beef and vegetable mixture into four portions in the skillet. Top each portion with 2 slices of white American cheese, allowing the heat to melt the cheese (cover the pan briefly with a lid for 20–30 seconds if needed). If you prefer a cheesier or more melted texture, add an additional half-slice per sandwich.

    Toast rolls (optional)

    While cheese melts, brush the cut sides of the hoagie rolls with mayonnaise or a little melted butter. Place them face-down on a separate hot skillet or under a broiler for 30–60 seconds until golden and slightly crisp. Watch carefully to avoid burning.

    Assemble sandwiches

    Using a spatula, scoop one cheesy beef-and-vegetable portion into each prepared hoagie roll. Add optional sliced hot or sweet peppers to each sandwich. Garnish with chopped parsley if using.
