Tamale Dough

Method

Preparation

  1. 1

    Soak Corn Husks

Soak the corn husks in warm water for about 30 minutes to soften them.

  2. 2

    Mix the Dough

In a large bowl, mix masa harina, baking powder, and salt. In another bowl, cream the vegetable shortening until fluffy. Gradually add the masa harina mixture to the shortening, alternating with the vegetable broth, until a soft dough forms.

  3. 3

    Assemble the Tamales

Take a soaked corn husk, and spread about 1/4 cup of tamale dough onto the center. Add your choice of filling (like shredded chicken, cheese, or vegetables) on top of the dough. Fold the sides of the husk in and then fold up the bottom. Place the tamale upright in a steamer.

  4. 4

    Steam the Tamales

Steam the tamales for about 1 to 1.5 hours, or until the dough separates easily from the husk. Make sure to keep the water boiling and check occasionally, adding more water as needed.
