    Prepare the crust

    Preheat the oven to 325°F (163°C). In a bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust.

    Make the filling

    In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add in the sour cream and vanilla extract, mixing until well combined. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.

    Add white chocolate and strawberries

    Melt the white chocolate in a microwave or double boiler. Let it cool slightly, then fold it into the cream cheese mixture. Gently fold in the chopped strawberries.

    Bake the cheesecake

    Pour the filling into the prepared crust and smooth the top. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an hour with the door ajar.

    Cool and serve

    Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving. To serve, slice and garnish with fresh mint leaves and drizzle with anglaise sauce.
