Braised Wagyu Preparation
In a large pot, heat olive oil over medium heat. Season the Wagyu beef with salt and black pepper. Sear the beef on all sides until browned. Add enough water or beef broth to cover the meat, bring to a simmer, and cover. Cook for 2-3 hours until the beef is tender and can be shredded.

Cook Pappardelle
In a large pot of salted boiling water, cook the pappardelle pasta according to package instructions until al dente. Drain and reserve a cup of pasta water.

Combine Ingredients
Add the cooked pappardelle to the pan with sautéed vegetables. Shred the braised Wagyu beef and add it to the pasta. Toss everything together, adding reserved pasta water as necessary to create a silky sauce.

Serve
Plate the pappardelle and garnish with chopped parsley and a generous sprinkle of Grana Padano cheese.
