Crème Brûlée Preparation

    Make the Custard

    In a saucepan over medium heat, combine heavy cream, granulated sugar, and orange zest. Stir until the sugar dissolves and the mixture is hot but not boiling.

    Mix Egg Yolks

    In a bowl, whisk together the egg yolks, vanilla extract, and a pinch of salt until well combined.

    Temper the Eggs

    Gradually add the hot cream mixture to the egg yolks, whisking constantly to prevent curdling. Strain the mixture through a fine sieve into a clean bowl.

    Bake

    Preheat the oven to 325°F (160°C). Pour the custard into ramekins and place them in a baking dish. Fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes or until set but still slightly jiggly in the center.

    Cool

    Remove from the oven, let cool at room temperature, then refrigerate for at least 2 hours or until fully chilled.

    Caramelize the Sugar

    Before serving, sprinkle a thin layer of brown sugar over the custard. Using a kitchen torch, caramelize the sugar until it forms a crispy crust. Serve immediately with berries and brandy snaps.
