House Cured Meats

    Cure the Pork Belly

    Mix salt, brown sugar, black pepper, minced garlic, and thyme in a bowl. Rub the mixture all over the pork belly. Wrap it tightly in plastic wrap and refrigerate for 7 days, turning it every couple of days.

    Dry the Meat

    After 7 days, rinse the pork belly under cold water and pat it dry. Hang it in a cool, dry place for about 2-3 weeks until it dries out.

Rillette

    Cook the Duck Legs

    Place the duck legs in a pot, add salt, thyme, bay leaves, and cover with duck fat. Cook on low heat for 2-3 hours until the meat is tender.

    Shred and Mix

    Remove the duck legs from the pot, shred the meat, and mix it with some of the cooking fat. Season with black pepper.

House Pickles

    Prepare Pickling Liquid

    In a pot, combine white vinegar, water, sugar, and salt. Bring to a boil until the sugar and salt dissolve.

    Pickle the Cucumbers

    Place the cucumber slices in jars, pour the hot pickling liquid over, and add fresh dill. Seal the jars and let them cool before refrigerating.

Mustard

    Soak Mustard Seeds

    In a bowl, combine mustard seeds, white wine vinegar, and water. Let it sit overnight.

    Blend and Store

    Blend the soaked mixture until smooth, adding salt. Store in a jar in the refrigerator.

Assembly

    Prepare the Charcuterie Board

    Arrange the cured meats, rillette, pickles, mustard, cheese, and sliced bread on a large board or platter. Serve and enjoy!
