Banana Crème Brulee

Prepare the Banana Mixture
In a blender, combine ripe bananas, heavy cream, granulated sugar, egg yolks, vanilla extract, and a pinch of salt. Blend until smooth and well combined.

Bake the Custard
Preheat the oven to 325°F (160°C). Divide the banana mixture evenly among ramekins. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 40-45 minutes or until the custard is set but still slightly jiggly in the center.

Cool the Custard
Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or until thoroughly chilled.

Caramelize the Sugar
Once chilled, sprinkle a thin layer of brown sugar on top of each custard. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy topping. If you don’t have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to prevent burning.

Serve
Garnish the Banana Crème Brulee with fresh berries and shaved dark chocolate. Serve with madeleines on the side.
