Cooking Instructions

  1. 1

    Prepare the Potatoes

Peel and chop the potatoes into even-sized cubes. Boil them in salted water for 15-20 minutes until tender. Drain and mash with horseradish sauce, adding salt and pepper to taste.

  2. 2

    Cook the Angus Hanging Tender

Season the Angus hanging tender steak with salt and black pepper. Heat 2 tbs of olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest for 5 minutes before slicing.

  3. 3

    Prepare the Broccolini

While the steak is resting, blanch the broccolini in boiling water for 2-3 minutes until bright green and tender-crisp. Drain and toss with remaining olive oil, salt, and pepper.

  4. 4

    Make the Roasted Pepper Demi

Roast the red bell pepper over an open flame or in the oven until charred. Peel and chop the pepper. In a saucepan, combine the chopped pepper with beef stock and simmer for 10 minutes. Blend until smooth and season with salt and pepper.

  5. 5

    Plate the Dish

On a serving plate, place a generous scoop of horseradish mashed potatoes. Add slices of the Angus hanging tender on top, and arrange the broccolini on the side. Drizzle the roasted pepper demi over the steak and serve.
