    Cook the Beef

    In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.

    Mix the Filling

    In the skillet, add the diced pickles, cheddar cheese, American cheese, ketchup, mustard, salt, and black pepper. Stir to combine and cook for an additional 2-3 minutes until the cheeses are melted. Remove from heat and let it cool slightly.

    Prepare the Egg Rolls

    Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold the sides inward and roll tightly to seal. Use a little water to moisten the edges to help seal the roll.

    Fry the Egg Rolls

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Carefully add the egg rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.
