Optional raisin infusion (do ahead, 2–12 hours)
Place 6 raisins in a small jar or measuring cup and cover with 1 oz of Goslings dark rum. Let sit at room temperature for 2–12 hours (longer gives stronger raisin flavor). Strain and reserve infused rum. Use in place of up to 0.5 oz of the dark rum called for below.

Combine and chill
Fill a cocktail shaker halfway with ice (about 1 cup). Add 2 oz Goslings dark rum (or 1.5 oz rum + 0.5 oz raisin-infused rum if using), 1 oz Benton Lane Pinot Noir, 0.5 oz fresh lemon juice, 0.5 oz simple syrup, and 2 dashes Angostura bitters.

Shake
Secure the shaker lid and shake vigorously for 10–15 seconds until the exterior of the shaker is cold and slightly frosted. This both chills and lightly dilutes the drink for balance.

Strain and serve
Place a large ice cube (or fresh ice) in a rocks glass. Double-strain the cocktail into the glass over the ice using a fine mesh strainer to catch any small solids or raisin bits.

Garnish and finish
Express an orange peel over the drink to release oils, rub the peel around the glass rim, then drop it into the drink. If you prepared raisin-infused rum, optionally thread a single infused raisin onto a cocktail pick and rest it on the glass as an additional garnish.

Serve immediately and enjoy. Tasting note: the dark rum provides molasses and brown-sugar depth while the pinot noir adds bright red-fruit and light tannic structure; simple syrup and lemon juice balance sweetness and acidity.
