Check label and condition
Inspect the bottle for label, vintage and fill level. Verify cork integrity and note vintage and producer (Fattori Sardi). This ensures any age-related considerations (decanting) are accounted for.

Chill / bring to serving temperature
If the wine is stored cooler than recommended, allow it to warm to about 16–18°C (60–64°F). If it is too warm, chill the bottle in an ice bucket for 20–30 minutes, checking frequently.

Decant if necessary
If the bottle is an older vintage or you notice sediment, gently stand the bottle upright for 24 hours before opening. For younger, tannic bottles, decant for 30–60 minutes to open aromatics. Use a decanter and pour slowly to separate wine from any sediment.

Select appropriate glassware
Choose a large-bowled red wine glass (Bordeaux-style) to concentrate aromas and allow the wine to breathe in the glass.

Open the bottle
Using a corkscrew, cut the foil cleanly, wipe the top of the bottle, then extract the cork slowly. Wipe the bottle neck with a clean cloth.

Presentation
Place the bottle on the table or offer the cork for guest inspection if appropriate. Present the wine name and vintage: 'Fattori Sardi, Tuscany'.

Tasting and final service
Allow guests to sniff and taste. If decanted, note that aromas and flavors may evolve over 20–30 minutes; offer top-ups as the wine breathes.

Bring cheeses to room temperature 30 minutes before serving for best flavor. Slice cured meats thinly and arrange them on a platter.

Arrange cheeses, cured meats, toasted bread and olives on a serving board. Provide small knives for cheese and tongs or forks for olives.

Recommend pairing richer, tannic vintages of Fattori Sardi with aged Pecorino and hearty cured meats; lighter vintages pair well with milder cheeses and olives. Serve and enjoy alongside the wine.
