Chill a coupe or rocks glass in the freezer for at least 5 minutes or fill with ice and water while assembling the cocktail.
Mixing the Cocktail

Add the grapefruit or aromatic bitters.

Stir (do not shake) for 20–25 seconds until the outside of the mixing glass is well chilled and the liquid is slightly diluted. If you prefer a slightly brighter aeration, give a very brief 3–4 second shake instead, then pour quickly over ice if serving on the rocks.

If serving up: double-strain the stirred mixture into the chilled coupe to remove any small ice shards and bitters sediment. If serving on the rocks: place a large ice cube in a rocks glass and strain the cocktail over the cube.

Top with the dry sparkling wine (2 tablespoons) poured gently down the side to preserve effervescence.

Hold the orange peel over the glass, express the oils by pinching and twisting it skin-side down above the surface, then rub the peel on the rim and drop it into the drink.

Garnish with a sprig of fresh thyme laid across the glass (optional). Serve immediately.
