Method
Kokum–Jamun Syrup (Kala Khatta Base)
Rehydrate kokum and extract juice
Rinse the dried kokum pieces briefly. In a small saucepan combine the kokum pieces and 1 cup of water. Bring to a gentle simmer over medium-low heat, cover, and simmer for 8–10 minutes until the liquid is deeply colored and aromatic. Remove from heat and let steep for 10 minutes, then strain, pressing the solids to extract as much liquid as possible. Reserve the kokum liquid and discard solids.
Cook jamun and make syrup
In the same saucepan add chopped jamun, 1 cup water and 1 cup sugar. Bring to a gentle boil over medium heat, stirring to dissolve sugar. Reduce heat and simmer 6–8 minutes until jamun softens and the mixture is syrupy. Mash some of the jamun with the back of a spoon to release color and flavor.
Combine and season the kala khatta syrup
Add the reserved kokum liquid to the jamun syrup. Stir to combine and simmer 2–3 minutes to meld flavors. Stir in 1 tsp black salt and 2 tbs fresh lime juice. If you want the characteristic dark smoky hue, stir in 1 tsp charcoal/burnt sugar extract or a pinch of activated charcoal (food-grade). Taste and adjust sugar, lime, or black salt. Remove from heat and cool to room temperature, then chill in the refrigerator until cold (at least 45 minutes).
Blueberry–Chilli Compote
Combine 1 cup blueberries, 2 tbs sugar, 2 tbs water, 1 tsp lime juice and 1 tsp red chilli flakes in a small saucepan. Bring to a simmer over medium heat, stirring occasionally. Cook 6–8 minutes until blueberries soften and burst and the mixture thickens slightly. Mash gently for a jam-like texture, or leave some whole blueberries for texture. Remove from heat and cool. Refrigerate until cold.
Gola Ice & Assembly
Prepare ice flakes (method A: ice shaver)
If using an ice shaver or gola machine: freeze water into large blocks if needed. Run the ice through the shaver to produce light fluffy ice flakes. Collect flakes in a chilled bowl to keep them from melting.
Prepare ice flakes (method B: quick home method)
If you don't have a shaver: place the large ice blocks or ice chunks in a sturdy plastic bag and crush with a mallet until you obtain fine flakes. Alternatively pulse briefly in a blender or food processor in short bursts to avoid melting into slush. Transfer flakes to a chilled bowl.
Fill individual serving cups nearly to the top with the fluffy ice flakes, pressing lightly so the ice holds shape (use about 1 to 1.25 cups of flakes per serving).
Spoon 1–2 tablespoons of the blueberry–chilli compote into each cup over the ice, distributing evenly. Then drizzle 2–3 tablespoons of the chilled kokum–jamun (kala khatta) syrup over the ice so it soaks into the flakes. Adjust amounts for sweetness and tartness to taste.
Garnish each gola with a few fresh blueberries, a sprinkle of chilli powder or chaat masala (if using), a pinch of black salt if desired, a small squeeze of lime, and a mint leaf. Serve immediately with a straw and small spoon so the diner can mix the layered flavors as they eat.
To store: keep the syrups refrigerated separately up to 1 week. Prepare ice and assemble just before serving for best texture.
