Prep & Muddle

Prepare cucumber infusion

Place 2 cucumber slices in a small jar or cup and lightly muddle once or twice to release a little juice and aroma — do not fully pulverize. Reserve remaining 2 slices for garnish/clarity test.

Mint readiness

Gently slap or clap the mint leaves between your hands to activate aromas. Reserve one small sprig for garnish; keep the rest for muddling.

In a shaker, add the muddled cucumber, the prepared mint leaves (about 8 leaves), fresh lime juice, and simple syrup. Using a muddler or the back of a spoon, press gently 6–8 times — you want to bruise leaves to release oils but avoid shredding them, which makes the drink cloudy.

Clarification (Wet & Dry Shake)

Add liquids and egg white

Add the white rum and 1/2 egg white into the shaker with the muddled mix. The egg white will help bind and clarify suspended solids when shaken and strained.

Dry shake

Seal the shaker and shake vigorously without ice for 15–20 seconds (dry shake). This emulsifies the egg white and begins softening solids for clearer separation.

Wet shake

Open the shaker, add ice (about 1 cup), and shake again vigorously for 12–15 seconds until the shaker is chilled and the exterior is frosty. This further extracts and aerates the egg white and helps trap fine particles.

Clarifying Filtration

Fine strain

Set a fine mesh strainer over a second shaker tin or a large measuring cup and line it with a doubled coffee filter or a very fine cheesecloth. Pour the shaken mixture through the filter slowly. Let gravity pull the liquid through — do not press the solids. This removes pulp and most mint fragments.

Optional second filtration

If you want maximum clarity, pass the filtered liquid through a fresh coffee filter into a clean container. This may take a few minutes but produces a very clear liquid.

Finish & Serve

Pour the clarified liquid into a chilled Collins or highball glass. Add the chilled soda water (approximately 3 oz) gently down the side to preserve clarity and light effervescence; stir once very gently with a bar spoon (1 full turn) to integrate.

Garnish by sliding the thin cucumber ribbon inside the glass against the wall for a crystal look, then rest the reserved mint sprig on top. Float the remaining 2 thin cucumber slices if desired for visual depth.

Serve immediately with a short straw. Note: the egg-white clarification adds a slight silkiness while producing a much clearer appearance; if avoiding egg, substitute 1/4 tsp soy lecithin (emulsifier) and adjust shaking — clarity will be less pronounced.
