1. Prep
Chill a coupe or Nick & Nora glass in the freezer or fill it with ice water while you mix the drink.
2. Dry shake
In a cocktail shaker, combine vodka (2 oz), peach liqueur (0.75 oz), dry vermouth (0.5 oz), fresh lime juice (0.5 oz), simple syrup (0.25 oz), and egg white or aquafaba (0.5 oz). Do not add ice. Seal the shaker and shake vigorously for 15–25 seconds to emulsify the egg white and create a silky foam.
3. Wet shake
Open the shaker and add a generous handful of ice (about 1 cup). Seal and shake again vigorously for 10–15 seconds until the shaker feels very cold to the touch and the mixture is well-chilled and frothy.
4. Double strain and serve
Discard ice or water from the chilled glass. Double-strain the shaken cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne strainer and a fine mesh strainer to catch ice shards and any bits of foam solids. The drink should have a smooth silk-like foam head.
