Prep

1. Chill glass

Place a martini/up glass in the freezer (or fill with ice water) for at least 5 minutes so the cocktail is served very cold.

2. Optional salt rim

If using a saline rim, rub the outer edge of the chilled glass with a grapefruit or orange wedge and lightly dip the rim into a small plate with fine sea salt. Tap off excess. Set glass aside.

Build & Shake

3. Combine ingredients

Add gin, dry vermouth, orange liqueur, fresh lemon juice, sea-salted grapefruit cordial (or grapefruit juice), simple syrup and 2 dashes of orange bitters into a cocktail shaker.

4. Add ice and shake

Fill the shaker with large ice cubes and shake vigorously for 10–15 seconds until the shaker is cold to the touch and the mixture is well-chilled and slightly diluted.

5. Double strain

Remove ice from the chilled martini glass. Strain the cocktail through the shaker strainer and, if desired, a fine strainer into the prepared glass to remove any tiny ice shards or pulp.

Finish & Garnish

6. Sparkling crown (optional)

If using, gently top the cocktail with about 1 oz of chilled champagne or dry sparkling wine to give a delicate effervescence and a brighter finish.

7. Garnish

Express the oils of a grapefruit (or orange) twist over the drink by holding the twist over the glass and giving it a firm squeeze, then run the peel around the rim and drop it into the drink.

8. Serve immediately while very cold. The Marine Drive Spritz (Up) should be bright, lightly saline with citrus and floral gin notes, and have a refined spritz if topped with sparkling wine.
