Preparation

Cocktail

1. Prepare and dry shake (if using egg white)

If using the egg white for a silky foam, add the gin, blue curaçao, lemon juice, simple syrup, egg white, and orange bitters to a cocktail shaker without ice. Seal and shake vigorously for 15 seconds to emulsify and build foam.

2. Wet shake

Add ice to the shaker (about 1 cup). Shake again vigorously for 10–15 seconds until the shaker is cold to the touch and the mixture is well chilled and slightly diluted.

3. Strain

Double-strain the cocktail into a chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and ensure a smooth texture.

4. Without egg white (quick method)

If you prefer not to use egg white, combine gin, blue curaçao, lemon juice, simple syrup, and bitters in the shaker with ice and shake vigorously for 10–15 seconds, then strain into a chilled glass.

Garnish

5. Express the oils of a lemon twist over the surface of the cocktail, then either drop the twist into the glass or rest it on the rim. For a more decorative presentation, add an edible flower or a small mint sprig on top of the foam (if present).
