1. Prepare fresh components

Juice fresh limes to yield at least 0.75 oz (about 22 ml) of lime juice. If using whole ginger, grate finely and press through a fine sieve or cheesecloth to extract about 0.25 oz (7 ml) ginger juice. If using fresh green mango, remove pulp and lightly puree or press to measure 0.5 oz (15 ml) of pulp.

2. Muddle coriander

In a cocktail shaker, place the 4 coriander leaves. Add the lime juice and sugar syrup, then gently muddle (press) just a few times to bruise the leaves and release aroma — do not over-muddle into a paste, you want fragrance without large bits.

3. Combine and shake

Add the gin (2 oz), mango pulp (0.5 oz), ginger juice (0.25 oz) and several ice cubes (about 6) to the shaker. Seal and shake vigorously for 12–15 seconds until the outside of the shaker chills and condensation forms. This both chills and lightly dilutes the drink, and mixes the mango and ginger evenly.

4. Double strain

Strain the cocktail through a fine-mesh strainer into a chilled coupe or chilled martini glass to remove coriander bits and any mango fibers. Double-straining ensures a smooth texture.

Garnish & Serve

5. Express the oils of a lime twist over the surface of the cocktail then drop it in or float a thin lime wheel on top. Add a small coriander sprig for aroma. Serve immediately while cold.
